You are correct in that Universal Music is the "publisher", or the company that issues the record, but Universal (most companies for that matter) publish releases under many different "labels" (in vinyl-speak) or imprints. Apple is just one of the imprints that Universal uses, along with Capitol, Virgin, Harvest and Blue Note (all ex-EMI), Decca, Polydor, Island, Mercury, A & M, Motown, Geffen, MCA, Impulse, Verve and so on. A fairly good rule of thumb is that names like Universal, Sony, BMG, EMI, WEA, etc are only labels when there is no other logo present (which happens occasionally, such as with a couple of CD's from contestants on Australia's version of X-Factor, who have recently released CD's with Sony Music as the only logo - Sony's more common labels are Columbia, Epic, RCA and the recently folded Arista and Jive).
This item, and another on the way, seem to be published in Mexico by the group named in the "Hecho en ..." statement. This is a usual statement of publication. The original Apple/UK publishing information is left partially intact on this item, and on the other one (not a Beatles/Apple release), so the Apple logo remains, but the name Apple as publisher has been removed. On this Mexican version, the Apple name appears as copyright holder. This is often the case when the publishing is done by a different publisher in a different country.
The date of publication could be later than 2011; it could be 2014. When I purchased this item in Mexico, it was part of a promotion, and it appeared to be a new release (in March 2014). Wish I had picked up more of these discs when I was in Mexico recently; I will explore these CDs more on my next trip, and make changes to this item if needed. My opinion today is that it is correct as is.
Shouldn't the label on this just be Apple? Universal Music Mexico is just the record company, I think. Also, Universal only completed the purchase of EMI last year, so unless the catalogue number and barcode are both the same as the original 2011 release, this should be made 2013.
