 In terms of primary sources, the archive of Musica e Dischi might be useful:
http://www.musicaedischi.it/index.php It seems to access this site costs €50 per year, but I couldn't even figure out how to subscribe.

Not sure how useful it is, but there is a collection of record catalogues online that also contains the FONIT 1949 catalog:

Somebody on the Italian Wikipedia has started (still incomplete) discographies of Fonit and Fonit Cetra releases:

 These Fonit discs from the late 50s have a date stamped in the runout, for example, on this one "1.6.55" is stamped on both sides. I would assume that this was a recording date, except that if this were correct, every one of the 5 records I have from this period on Fonit was recorded on the 1st of the month - highly unlikely. I would guess that the 2nd and 3rd numbers, at least, indicate the month and year of recording.
